Plantain Hash

“A splash of Caribbean at brunch is always a good thing”

1 tbs of butter

3 ripe plantains (skins almost black)

½ red pepper, diced

½ cup of red onion, diced

1 tsp of sugar

¼ tsp of cayenne pepper

4 eggs

Handful of chopped parsley

 

In a cast iron skillet or oven ready pan, melt better over medium heat. 

Add plantains to the pan, evenly spread out.  Sprinkle with sugar. 

Cook 15 minutes, flipping occasionally until plantains are evenly browned.

Add the onions and red pepper, and carefully cook for about 1 minutes, making sure not to break up the plantains.

Carefully crack 4 eggs on top of the plantains as a sunny side up egg.

Add to the oven and broil 5 minutes until the egg white is set.  Sprinkle chopped parsley.

Add salt and pepper to taste.
