Pork Chimichurri Skewers

“The highlight of any summer celebration”

4 lbs of pork shoulder thinly sliced

Marinade:

1 cup of soy sauce

½ cup of lemon juice

4 tbs of brown sugar

5 gloves of garlic, thinly sliced

1 teaspoon of black pepper

2 teaspoons of salt

1 ½ cups of lemon lime soda

4 stalks of green onions, chopped

Ingredients:

Asian Chimichurri:

½ cups of chopped Thai basil

1/2 cup of chopped cilantro

2 stalks of green onions finely chopped

¾ cup of neutral oil

1 chopped garlic glove

Juice of 1 lemon

Salt and pepper to taste

Instructions:

1.       Arrange pork slices in a large bowl.

2.       Add of the marinade ingredients together and mix well.  Cover bowl and refrigerate overnight.

3.       Make the chimichurri: mix all ingredients together in a bowl. Set aside until serving.

4.       Attached the marinated pork to the bamboo skewers.

5.       Heat up the grill and cook about 3-5 minutes per side until the meat is cooked through.

6.       Serve with a side of chimichurri.
