Mango Salad

“A twist on a Filipino recipe from my heritage”

 Ingredients:

1 garlic clove chopped

½ cup of fresh lime juice

1 tsp of fish sauce

2 tbs of light oil

2 tbs of sweet chili sauce

4 green mangoes, peeled, julienned or thinly sliced

1 English cucumber, thinly sliced

1 shallot, thinly sliced

½ cup of toasted almonds

½ cup cilantro

1)       Make the Dressing: Combine garlic, lime juice, fish sauce, oil, and sweet chili sauce until well blended

2)       Toss the mangoes, shallots, almonds, cilantro, and dressing until well combined.  Season with salt to taste
