Citrus Salad

“Bright flavors with a surprising kick”

Ingredients:

1 large grapefruit

1 orange

Juice of 1 lemon

1 tbs of honey

2 tsp of harissa

2 tbs of greek yogurt

3 cups of arugula

2 tbs of toasted pumpkin seeds

Handful of mint

1/4 cup of neutral oil

Instructions:

  1. With a paring knife, gently cut off the peel and white pith of the orange and grapefruit, careful to not cut off too much flesh. Slice into 1/4” slices crosswise

  2. In a bowl, mix the dressing by combining the lemon juice, honey, harissa, greek yogurt and neutral oil

  3. Arrange the bed of arugula on the plate

  4. Top with sliced citrus, pumpkin seeds, and mint.

  5. Drizzle with dressing
