Roasted Nectarines

“An easy, impressive dinner party dessert…. or any day of the week!”

Ingredients:

3 ripe nectarines

1/4 cup of honey

1 cup of mascarpone cheese

1/4 tsp of vanilla extract

1/4 tsp of cinnamon

3 sprigs of thyme

salt and pepper to taste

Instructions:

  1. Halve each nectarine and remove pit

  2. Place in an oven safe baking pan flesh side up

  3. Gently spread the honey all over the flesh of the nectarine. Sprinkle with salt and a crack of black pepper.

  4. Sprinkle thyme leaves on top

  5. Roast in the oven at 350 degrees for 20 minutes

  6. Mix mascarpone, vanilla and cinnamon in a bowl

  7. Place about 1 tbs of the mascarpone mixture onto the center of each nectarine and serve!

Mascarpone is a soft, Italian cream cheese. It has a creamy texture that when combined with a hint of vanilla and cinnamon, it’s the perfect topping to these roasted nectarines.
